Savory Baked Rice

A great side dish. Flavorful and very fluffy.

Ingredients:

3 T. butter

1 cup brown or white rice

1-2 shallots, minced

1-2 cloves garlic, minced

2 1/4 c. chicken or vegetable broth

1/4 tsp. salt

1/8 tsp. black pepper

1/2 tsp. chopped fresh rosemary

1. Preheat oven to 350.

2. Melt butter in medium-sized oven-safe saucepan or casserole.

3. Add garlic and shallots, heat on medium heat until translucent and soft (about 3-4 minutes).

4. Stir in rice until thoroughly coated with melted butter.

5. Stir in broth, salt, pepper, and rosemary; bring to a boil.

6. Cover and move into hot oven. Bake 1/2 hour for white rice, 45 minutes for brown. Fluff and enjoy!
